The notion of being 'typical' which describes great wines requires not only good soil but also an absence of any productivist ways of wine-growing.
We, therefore, constantly strive to use traditional methods : grafting and a control of the grass growing on the ground, the elimination of any agressive plant treatments, manual harvesting, careful pruning and a limited production per hectare.
